That’s just Dhaling

So, lentils. Damn hippy food. Damn tasty hippy food though. Here’s an easy lentil recipe that you can make to get your healthy eating on. After all, it’s World Vegetarian Day on October 1.

First, assemble your ingredients:

I like to use as many vegetables as possible at once. It makes me feel better when I eat cheese for dinner for the rest of the week!

Finely dice a couple of onions, some garlic and a thumb-sized bit of ginger, and fry with some mustard seeds and garam masala. Add in a 2 cans of tomatoes, and 2 cups of red lentils, and a can of coconut cream.

In this picture, you can see I’m using one cup of red lentils and one cup of yellow lentils. I’m still not sure how I feel about this variation though

Bring to the boil, then turn down and simmer for around half an hour, adding water or stock as needed to keep it soupy, then add some almond pieces and chopped fresh coriander. You can also add canned chickpeas, diced carrots, celery, kumara, and anything else that strikes your fancy. Enjoy!
